Naan or Nân is a traditional bread and emblematic of Indian cuisine. It can be eaten neat or stuffed with cheese.

Ghee is a clarified butter, that is, a butter from which water, lactose and proteins (caseins) are removed to keep only the fat. Still little known in France, Ghee (pronounced Ghi) is a key food of Indian and Oriental Ayurvedic cuisine known for its richness in vitamins, antioxidants and for its great digestibility. It is considered one of the healthiest sources of fat.

Bernard Gaborit organic Ghee has a high nutritional content thanks to the high quality of the organic milk from the Jersey cows it comes from. It is the feeding of cows grazing on mixed meadows and green hay, which makes it particularly rich in beta-carotene (precursor of vitamin A), and which gives it a beautiful golden color and a unique flavour.

Ghee can be stored for several months, even after opening. It should be stored at room temperature and protected from light.

For this recipe of Organic Naan with Cheese, you can also use Bernard Gaborit organic whole milk creamed yogurt, made in an artisanal way with fresh organic milk and 100% French Jersey cows, non-homogenized and non-standardized, without adding powdered milk or additives.

Preparation

  1. Mix yeast, sugar and warm water. Leave to rest until the mixture starts to foam, then add the yoghurt.
  2. In another large bowl, combine the flour and salt. Make a hole in the center and pour the preparation then the melted ghee. To mix together.
  3. Gradually add the water until the dough is firm and not dry.
  4. Work the dough on a floured surface for about 5 minutes until you get a smooth and less sticky consistency. Cover and leave to rest for 2 hours.
  5. On a lightly floured surface, tap the dough with your fist to expel the air. Add the grated Tomme d’Anjou and divide the dough into 10 balls.
  6. Meanwhile, heat a skillet over very high heat, with a dash of ghee.
  7. Flatten and roll out the balls, roll them out and place them in the hot pan. When the batter starts to boil, flip it over and cook until the other side is golden brown.
  8. Brush the naans with melted ghee and garnish with your chosen herbs: parsley, coriander or spring onion, etc.
