Leek fondue

Ingredients :

  • 800 g of leeks
  • 50 g of butter
  • 3 tbsp. fresh cream
  • 1 squeeze of lemon juice
  • 10cl of white wine
  • Salt and pepper

Preparation :

1. Separate the leeks and cut them into fairly thin slices. Wash them well with water.

2. In a large skillet or saucepan, melt the butter and add the leeks. Mix well.

3. Put low heat, cover and melt for about 30 minutes. Stir occasionally.

4. Then add the fresh cream, pour over the white wine and pour over the lemon juice. Season with salt and pepper, mix well and leave to reduce for another ten minutes.

5. Serve the leek fondue piping hot, for example with fish.

Ingredients :

  • 1 shortcrust pastry
  • 4 eggs
  • 25 cl liquid cream
  • 3 leeks
  • 1 can of natural tuna
  • grated cheese
  • Salt and pepper

Preparation :

1. Start the recipe for the leek and tuna quiche by spreading the shortcrust pastry on a baking tray with a sheet of parchment paper. Using a fork, prick the bottom of the cake.

2. Cut the ends of the leeks and wash them well in water. Drain them then cut the leeks into small pieces. Arrange the leeks on the bottom of the pie.

3. After opening the can of natural tuna, drain it. Then, crumble the contents of the box into the cake.

4. In a small bowl, crack the 4 eggs and beat them. Pour in the liquid cream. Mix well. Season.

5. Pour the mixture over the quiche. Sprinkle with grated cheese and bake for 40 minutes at 180°C. Enjoy this leek and tuna pie. Serve the quiche with a green salad.

Curry Leek Soup

Ingredients :

  • 2 large leeks
  • 2 potatoes
  • 50 g of butter
  • 50cl of milk
  • 50cl of water
  • 2 tbsp. fresh cream
  • Curry powder
  • Salt and pepper

Preparation :

1. Wash the leeks well and chop them finely. Brown them in a large pan with the butter. Add the peeled and diced potatoes.

2. Pour in the water and milk then cover. Let it cook for about 30 minutes. The potatoes must be tender. To be sure of cooking the potatoes, prick them with the blade of a knife, if they slip they are cooked.

3. Mix everything together, add fresh cream and curry. Season to your taste. Serve hot.

Leeks revisited in vinaigrette

Ingredients :

  • 4 leeks
  • 4 eggs
  • 3 slices of wholemeal bread
  • 2 bird peppers
  • 3 tbsp. olive oil
  • 2 tbsp. soy sauce
  • 1 c. Sesame seeds
  • 7 sprigs of parsley

Preparation :

1. Cut off the top green part of the leek, then score the leek all the way through. Turn the first sheet over towards the base and cut it into 3 cm thick slices.

2. Arrange everything on a sheet of baking paper and bake for 30 minutes at 180°C.

3. While cooking, cut the slices of bread into cubes.

4. Then in a greased skillet, saute the cubes until colored. Book.

5. Cook the eggs for 10 minutes, then cut them into cubes.

6. Cut the pepper into cubes. Mix the olive oil, soy sauce, sesame seeds and crushed pepper.

7. Pour the mixture over the leeks and sprinkle with the eggs, croutons and chopped parsley. Serve as an appetizer.

Leeks in ham

Ingredients :

  • 3 leeks
  • 50 g of butter
  • 60 g of flour
  • 6 slices of white ham
  • 1/2 milk
  • Grated cheese

Preparation :

1. In a saucepan of boiling water, steam or boil the leek whites until tender.

2. To prepare the béchamel, melt the butter then pour the flour into a saucepan. Mix well with a whisk, without stopping. Slowly pour in the milk without stopping whisking. Cook over medium heat until thickened.

3. Cut the leeks into 2 equal parts, roll a slice of ham around each piece.

4. Arrange the leeks in a baking dish, pour the homemade béchamel over the leeks with the ham and sprinkle with grated cheese. Bake at 180°C for 45 minutes.

Salmon and leek clafoutis

Ingredients :

  • 300 g of cooked salmon
  • 3 leeks
  • 3 eggs
  • 20 cl of liquid cream
  • 10cl of milk
  • 3 tbsp. White wine
  • 1 c. olive oil
  • 1 onion
  • Salt and pepper

Preparation :

1. Start the salmon and leek clafoutis recipe by preheating the oven to 180°C.

2. Rinse the leeks before slicing them. Peel the onion and cut it finely.

3. Cut the cooked salmon into cubes and set aside.

4. Heat a tablespoon of extra virgin olive oil in a pan. Then add the leeks. After 10 minutes, deglaze with three tablespoons of white wine. Season the mixture with salt and pepper to your liking.

5. Break the eggs into a bowl. Then add the liquid cream and the milk, and blend everything to obtain a homogeneous mixture. Book.

6. Spread the leeks on the bottom of a baking dish before adding the diced salmon.

7. Then cover everything with the clafoutis device.

8. Cook the salmon and leek clafoutis for 30 minutes at 180°C.

Cooking time : 45 minutes

Ingredients :

  • 4 tbsp. Butter
  • 800 g of chopped leeks
  • 350ml whole milk
  • 170 g of fresh cream
  • 50 g of blue cheese
  • 3 cloves of garlic
  • 1 c. mustard
  • 1/4 tsp. Nutmeg
  • Salt and pepper
  • 150 grated cheese
  • 50 g grated parmesan
  • 800 g potatoes, sliced
  • 3 tbsp. chopped chives

Preparation :

1. Melt the butter in a non-stick pan and add the sliced ​​leeks. Leave to melt covered for about twenty minutes, stirring regularly.

2. Add the milk, crème fraîche, blue cheese, crushed garlic cloves, mustard, nutmeg, salt and pepper. Mix well and cook for about fifteen more minutes, stirring occasionally.

3. Set aside from the heat to cool.

4. Mix in the grated cheese and Parmesan.

5. Place a third of the potatoes in a buttered baking dish and cover with the leeks. Sprinkle with cheese and chives then repeat the operation until all the ingredients are used up. Finish with a layer of cheese and chives.

6. Bake for 45 minutes at 180°C, covering the pan with aluminum foil. Prick to check the cooking of the potatoes. Once tender, let them brown for a few minutes under the grill, bringing the oven temperature to 210°C.

  • 300 g of leeks
  • 1 onion
  • 30 g of butter
  • 450ml of water
  • 300 g of potatoes
  • 1 vegetable stock cube
  • 250 g of milk
  • 15 g of cream
  • Salt and pepper

Preparation :

1. Rinse the leeks well then slice them. Peel and coarsely chop the onion.

2. Brown everything in a pan with the butter for a few minutes.

3. Cover with water then add the peeled and cut potatoes and stock cube. Mix well and cook for about 25 minutes.

4. When the potatoes and leeks are well cooked, add the milk and fresh cream and mix until you obtain a homogeneous mixture.

5. Salt and pepper to taste and serve this leek soup recipe right away!

Scallop and leek skewers

Ingredients :

  • 2 white leeks
  • 200 g of scallops
  • 1/2 lemon
  • 2 tbsp. spoons of olive oil (or sesame)
  • 2 tbsp. teaspoon of sesame seeds
  • Salt and pepper

Preparation :

1. Wash the leeks in water and cut them into fairly large slices. Blanch them in boiling salted water for about 10 minutes.

2. Meanwhile, prepare the scallops. Thread the pieces onto skewers, alternating between scallops and leeks.

3. Mix the juice of half a lemon, the olive oil and the salt and pepper, then brush the skewers with this preparation. Sprinkle with sesame seeds and cook in a pan for 5 minutes or on the barbecue. Treat yourself to an aperitif or an appetizer with this original recipe.

Ingredients :

  • 2 leeks
  • 2 eggs
  • 50 g of flour
  • 5 cl of cream
  • 5 cl of white wine
  • 45 g of grated Comté cheese
  • 1 shallot
  • 2 tbsp. to s. of milk
  • 1/2 sachet of baking powder
  • 1 c. Butter
  • 1 pinch of nutmeg
  • Salt and pepper

Preparation :

1. Start by preparing the leek fondue (see the first recipe in the article).

2. Preheat the oven to 180°C.

3. In a bowl, beat the eggs with the milk. Then pour in the flour and baking powder, then knead until you get a homogeneous dough. Add the leek fondue and the grated Comté cheese. Mix the preparation.

4. Butter or lightly oil the cavities of a muffin pan. Distribute the dough into the molds and bake for 15 minutes.

5. Remove the muffins with leek fondue from the oven and let them cool down before enjoying them. Treat yourself !
