– 1 roll of puff pastry
– 600 g of homemade ratatouille
– 4 minced garlic cloves
– 3 eggs
– 100 g of grated cheese
– 15 cl of cream
– Salt and pepper
– Thyme

Preparation :

1. Preheat the oven to 210°C (thermostat 7).

2. Mix the cream, eggs, cheese, salt, pepper and thyme and the ratatouille in a salad bowl.

3. Spread the dough with its baking paper in a cake tin then arrange your homemade ratatouille and cover it with the preparation.

4. Bake in the oven for 35-40 minutes. Treat yourself to a green salad.

Arancini with basil for the aperitif

Preparation time : 15 minutes

Cooking time : Five minutes

Ingredients :

  • 100 grams of mozzarella
  • 1 onion
  • 50 cl of vegetable broth
  • 250 g of rice for risotto
  • 50 g of Parmesan
  • salt and pepper
  • bread crumbs
  • basil
  • 1 egg
  • 20 g of butter
  • Fry oil

Preparation :

1. In a first saucepan, boil the water with the vegetable broth.

2. In a second pan, put the chopped onion and the butter. Add the risotto rice, then gradually add the vegetable stock. The rice shouldn’t be drowned. At the end of cooking, add the chopped basil and Parmesan. Salt and pepper. Let cool. Reserve.

3. Place the breadcrumbs in one deep dish and the beaten egg in another.

4. Cut your mozzarella into small pieces. Form the rice into balls and place a piece of mozzarella inside.

5. Dip the meatballs in the beaten egg, then in the breadcrumbs. Then set your arancini aside for a few hours in a cool place to harden them.

6. Then fry them in frying oil. Delight your guests with this vegetarian appetizer recipe.

Ravioli with mushrooms and hazelnut cream

Ingredients :

  • Ravioli 200 g
  • 200 g of mushrooms
  • 25 cl of fresh cream
  • 1 shallot
  • 1 clove of garlic
  • 1 handful of hazelnuts
  • Parmesan cheese
  • Butter
  • 1 bunch of parsley
  • Salt and pepper

Preparation :

1. Chop the garlic and slice the mushrooms. Brown them in a pan greased with oil. Salt and pepper. Add the chopped parsley.

2. In a pot of water, heat your ravioli. Then drain them.

3. Slice the shallot and brown it in a pan with a square of butter. Then pour in the fresh cream. Salt and pepper. Then add the mushrooms, garlic and parsley. Mix well.

4. Put a handful of chopped hazelnuts in the cream pan.

5. Arrange your ravioli on the plate. Pour in the mushroom and hazelnut cream. Serve this vegetarian dish piping hot!

Quiche with polenta, spinach and mozzarella

Ingredients :

  • 1 puff pastry
  • 100 grams of mozzarella
  • 100 g of polenta
  • 150 g of chopped spinach
  • 3 eggs
  • 1 red onion
  • 30cl of milk
  • grated cheese
  • Rocket
  • 10 cl of vegetable broth
  • Salt and pepper

Preparation :

1. We start by preheating the oven to 210°C.

2. Cut the mozzarella into small pieces. Chop the red onion, as well as the previously washed spinach.

3. Heat the vegetable broth in boiling water.

4. Mix the polenta, eggs and milk in a bowl. Salt and pepper.

5. Mix the mozzarella, red onion and spinach. Sprinkle a handful of Gruyère. Add the vegetable broth. Then pour it all into your cake pan.

6. Cook for 40 minutes at 210°C. Serve this vegetarian dish with rocket.

Zucchini cannelloni with vegetables

Ingredients :

  • 2 zucchini
  • 1 onion
  • 2 cloves of garlic
  • 1/2 aubergine
  • 400 g of crushed tomatoes
  • 200 g of tomato sauce
  • Herbs of Provence
  • Salt and pepper
  • Olive oil

Preparation :

1. Start by cutting the zucchini into thin strips lengthwise using a mandoline or vegetable peeler. Place them on a baking sheet, sprinkle with salt and let them drain for 15 minutes.

2. Meanwhile saute the chopped onion and garlic in a drizzle of olive oil until translucent. Add the aubergines cut into small cubes.

3. Pour in the crushed tomatoes, season with Provençal herbs, salt and pepper, then cook over medium heat for 15-20 minutes.

4. Take a slice of zucchini, garnish it with the previous preparation then roll them up into cannelloni. Repeat the process until you run out of ingredients.

5. Pour a little tomato sauce on the bottom of a baking dish and tightly arrange the zucchini cannelloni. Cover with the tomato sauce and bake at 180°C for 15-20 minutes. Enjoy these hot veggie cannelloni!

Croque-monsieur of goat cheese with honey

Ingredients :

  • 4 slices of bread
  • grated cheese
  • 1 block of goat cheese
  • 2 tbsp. honey
  • Butter
  • 1 handful of walnuts
  • Pepper

Preparation :

1. Butter one side of each slice of bread.

2. Place the goat cheese slices on two of the bread slices. Pour spoons of honey. Pepper.

3. Cover with the chopped walnuts. Close with the second loaf.

4. On top, sprinkle with grated cheese.

5. Bake in the sandwich maker. Serve with green salad, enjoy your meal!

The traditional cauliflower gratin with bechamel sauce

Preparation time : 10 minutes

Cooking time : 45 minutes

Ingredients :

  • 1 cauliflower
  • 50 g of butter
  • 50 g of flour
  • 750ml of milk
  • Salt and pepper
  • 1 pinch of nutmeg
  • 150 g of grated cheese

Preparation :

1. Cut the cauliflower into bunches and wash it.

2. Cook in plenty of boiling water (or steam) until tender. To check doneness, prick the bouquets with the blade of a knife. If they slip, they’re cooked.

3. Melt the butter in a saucepan then add the flour. Gradually add the milk, stirring vigorously. Cook until the bechamel thickens. Salt, pepper and add the nutmeg.

4. Drain the cauliflower and place it in a baking dish. Pour over the béchamel and mix well (you can lightly crush the cauliflower with a whisk).

5. For a little more flavour, sprinkle with grated cheese and bake for 30 minutes at 180°C so that it is golden brown. Serve hot!

Zucchini caviar for appetizer

For 4 people

Preparation time : 10 minutes

Cooking time : 20 minutes

Ingredients :

  • 1 kg of zucchini
  • 100 ml liquid fresh cream
  • 1 c. coffee curry (or spices of your choice)
  • 3 tbsp. olive oil
  • Salt and pepper

Preparation :

1. Start by washing the courgettes well and cutting off the ends. Cut them in half lengthwise and steam them for 20 minutes.

2. Let the courgettes cool in a colander so that they release their water.

3. In the meantime, heat the fresh cream with the curry (or spices of your choice).

4. Squeeze the courgettes one last time with your hands then put them in a blender with the curry cream and olive oil.

5. Mix until a homogeneous mixture is obtained. Add salt to taste and leave to cool for at least an hour.

6. Serve the zucchini caviar with slices of bread as an aperitif.

Eggplant and tomato paste

Preparation time : 20 minutes

Cooking time : 15 minutes

Ingredients :

  • 300 g rigatoni (or other pasta of your choice)
  • 1 eggplant
  • 400 g of cherry tomatoes
  • 1 onion
  • 15 cl of tomato sauce
  • 1 c. coffee curry
  • Salt and pepper
  • Herbs of Provence
  • Basil leaves
  • Olive oil
  • Gruyère and grated Parmesan

Preparation :

1. Cook the pasta in a pot of hot water.

2. Cut the previously washed aubergines into cubes. Chop the onion and garlic.

3. Fry everything in a pan with olive oil. Season.

4. Cut the cherry tomatoes in half. Add to fire. Pour in the tomato sauce. Mix.

5. Arrange the drained rigatoni on a plate. Cover with the rest of the preparation. Everything must be well blended. Sprinkle curry. Stir actively again. Salt and pepper.

6. Decorate with basil. Sprinkle with grated cheese and Provencal herbs. Enjoy this 100% vegetarian recipe.

Fried tofu with maple syrup and green beans

Cooking time : 10 minutes

Ingredients :

  • 200 g of tofu
  • 1 c. cornstarch
  • 2 tbsp. soy sauce
  • 2 tbsp. Maple syrup
  • 1 pinch of ginger
  • 1 clove of garlic
  • Sesame seeds
  • Green beans
  • The oil

Preparation :

1. Cut the tofu into cubes. Mix it with cornstarch.

2. Heat the oil in a pan and then add the tofu.

3. On the side, mix the soy sauce, maple syrup, minced garlic and ginger in a bowl.

4. Remove the tofu from the heat and dip it in the marinadequate. This must fully penetrate the tofu. Mix well. Sprinkle with sesame seeds.

5. Serve this vegetarian recipe with green beans.
