– 400 g of tofu

– 150 g of beef

– ½ tablespoon of sesame oil

– 2 tablespoons of Doubanjiang (a spicy and salty paste)

– ½ tablespoon fermented black beans (dou-chi)

– 2 shallots

– 3 stalks of onion

– 1 clove of garlic

– 15 g of grated fresh ginger

– 1 tablespoon of corn starch

– Salt and pepper (Sichuan if possible)

– 1 tablespoon of salted soy sauce

– The oil

Preparation :

1. In a large bowl, add the ground beef, salt, pepper and a little sesame oil. Reserve. Meanwhile, cut the tofu into cubes and cook it in salted water for a minute. Drain the tofu and set it aside.

2. Pour a drizzle of oil into a wok and brown the meat. Remove the meat once cooked. Add two tablespoons of Doubanjiang. garlic, shallots, ginger and black beans. Add the pepper and let everything cook.

3. Add hot water (about 125ml) and bring to a boil. Put the tofu cubes and add the soy sauce and ground beef.

4. Reduce the heat and let the preparation cook for about 5 minutes. Finally, arrange the sliced ​​​​onion stalks and the mixture of cornmeal and water. Salt to taste.

Imperial chicken (Kung pao chicken)

– Diced chicken breasts

– 80 g of unsalted cashews

– 1 bell pepper

– 2 tablespoons of soy sauce

– ½ teaspoon of icing sugar

Preparation :

1. For the marinade, mix the rice wine, soy sauce, cornstarch in a bowl. Add some soy sauce.

2. Add the chicken breast to the marinade and refrigerate for 30 minutes.

3. In a wok, heat the peanut oil and sauté the sweet pepper, minced garlic, ginger, onion and bell pepper. Add Sichuan pepper.

4. Add the marinade to the preparation and brown everything for 5 minutes.

5. In a skillet, brown the cashews. Sprinkle the dish with chives.

Ingredients :

– 1 Duck ready to cook

– 1 tablespoon of five spice powder

– 1/2 glass of liquid honey

– Soy sauce – Salt

– 2 crushed garlic cloves

Preparation :

1. Immerse the duck in boiling water for a few seconds. Wash inside out. Then poke holes in the duck’s skin. Reserve.

Preparation :

1. In a large bowl, combine the ingredients for the filling. Then place the filling on each wonton wrapper square. Lightly wet the outline of the dough to fold it over and secure it in the center. Reserve the dumplings on a parchment paper-lined baking sheet.

2. In a pot of boiling salted water, cook the ravioli for 5 minutes. Drain them. Do the same with the chicken broth for 5 minutes. Garnish the soup with green onion.

Ingredients :

– 2 onions – Choice of meat (filet mignon, turkey, pork, etc.)

– Sesame oil

Preparation :

1. Prepare the dough by mixing the flour, oil, baking powder and sugar. Then add vinegar for a nice texture. Leave to rest for at least 1 hour.

2. For the filling, saute the onions and sesame oil in a wok. Add the meat of your choice cut into small pieces. Brown.

3.On the side, melt the Chinese cabbage cut into pieces in the sesame oil then add the meat and soy sauce. To mix together.

4. Take a ball of dough, roll it out on the work surface and flatten it into a circle. Put a little filling in the center and close the dough forming a purse. Pinch the top tightly and twist lightly. Steam for about 20 minutes.

– 30 g of powdered milk

– 3 eggs

– 270 g of sugar

– 150 g of unsalted butter

– 1 tablespoon of baking powder

– 200 g of green bean paste

– 50 g of raisins

– Soybean oil

– Black sesame seeds

Preparation of the dough:

1. In a large bowl, combine the flour, powdered milk and salt. In a bowl, beat the sugar and the egg yolks. Add the melted butter and mix everything together.

2. Add the sifted flour and baking powder, mix everything to form a dough. Leave to rest for at least 2 hours. Then cut the dough evenly using a circular cookie cutter.

To garnish:

1. Soak the beans and drain them. Boil them in boiling water. Drain them and pour them into a saucepan. Mash the beans into a paste then add a little soybean oil and sugar. Reserve.

2. In a saucepan, toast the sesame seeds over high heat with a little soybean oil for 5 minutes. Preheat the oven to 200°C.

– 2 red peppers

– 1 teaspoon of icing sugar

– 1 chicken broth

– Olive oil

– Ginger powder

– Olive oil

– Salt and pepper

Preparation :

1. Cut the meat into cubes and brown it in a wok with a drizzle of oil over high heat. Then reduce the heat.

2. During cooking, rinse the peppers and chop them finely. Wash the leeks and cut them into strips. Chop the garlic and chop the other vegetables.

– 10cl of milk

– 150 g Japanese panko breadcrumbs (or breadcrumbs)

– 20 peeled prawns

– 80 g of tomato puree

– Basil leaves

Preparation :

1. In a bowl, beat the eggs and milk. Heat the oil in a saucepan.

2. In a bowl combine the breadcrumbs, Parmesan and salt. Dip each prawn in the egg and then in the breadcrumbs.

3. Cook for about 1 minute over high heat until the breadcrumbs are golden brown. Then sprinkle the donuts with Parmesan.

4. Toast the prawn fritters in the oven for about 2 minutes.
