How to cook without allergens thanks to Marie Lossy’s workshops.

Marie Lossy, an exceptional cook, combines the pleasure of inventing small dishes taking into account the food evictions of her multi-allergic son. Since birth, she has had 25 food allergies, some of which can trigger anaphylaxis. However, it’s not about frustrating her “greedy allergy”. Thus, for almost 20 years, she has been inventing specific recipes that combine gustatory delights and exclusion of the food allergens in question. She is now passing on her knowledge about her to other allergy sufferers by organizing online cooking workshops. .

Experience on the field

For many years, on her blog, Marie has been proposing the preparation of cakes, sweet or savory dishes without the 14 notifiable allergens (ADO) or other allergens to which her child reacts.

The production of gluten-free bread is also planned. In reality, it’s about learning to eat greedily despite multiple food allergies. Over the years she has accumulated solid experience in substituting this or that forbidden ingredient for her child. Gluten-free flours have no more secrets for her.

Collective learning

At first, it offers cooking workshops by going to the participants’ homes. However, one event will change the game with Covid and repeated confinements. Since nothing stops her, she has chosen to teach others her cooking compositions during webcam sessions via Zoom.

Whether you are a beginner or an expert cook, her recipes are within everyone’s reach. Why take a course when the recipe is on the blog? Simply because during the collective session he cooks the chosen dish with you. Furthermore, “icing on the cake”, there is the exclusivity of the special recipes of the laboratory not disclosed on the web!

Marie L. explains the very simple procedure for registration. “With this formula, the number of participants is set at a maximum of eight per session. This takes place on one Saturday a month from 2-3.30pm. People receive the ingredient list the previous Monday after registering and paying.” The theme is fixed in advance, “it could be a gluten-free bread or a pastry”. . Individual lessons.

The programming of the individual lesson takes place according to our respective timetables” specifies Marie Lossy. The recipe made depends on the person’s choice. In this setup, Marie Lossy helps the person come up with the recipe via interposed video.

The enrollment conditions are identical to group lessons. Furthermore, training via the Internet makes it possible to reach a maximum of people even outside France, one condition however: to speak French. “I have done workshops with people from the west coast of the United States, Canada, Reunion, Belgium and Switzerland, Spain”.

These workshops can be offered to a parent-child duo “I had a three year old who wanted to help his mother, otherwise he might have considered a workshop for an 8 year old accompanied by a parent” indicates Married.

“In addition to food allergies, participants with other pathologies such as fibromyalgia, rheumatoid arthritis, lactose intolerant, celiacs enroll in the workshops” specifies the culinary blogger.
