The juice of one lemon
3 tablespoons raw, unrefined coconut oil
1/4 teaspoon sea salt
1 head of broccoli, coarsely chopped (the particularly woody parts can be cut, but it is good to include the stem as well).
1 head of garlic, cloves removed and minced
1 courgette washed but not peeled and coarsely chopped
3 medium or 2 large yellow onions, peeled and roughly chopped
10 dinosaur cabbage leaves, coarsely chopped
½ cup packed coriander (or fresh coriander, for Brits)
½ cup packed parsley

In a large pot, heat the coconut oil over medium-high heat. Add the onions and cook for 5 minutes, stirring occasionally. Then add the zucchini, cabbage and broccoli and cook for another 5 minutes. Working in batches, if needed, add cilantro, parsley, lemon, and sea salt until very smooth. Turn off the heat and add the garlic, then let cool, uncovered, for 15 minutes. Pour in the vegetable stock and bring to a boil, then reduce the heat to low and simmer, covered, for 15 to 20 minutes or until the broccoli pierces easily with a fork.
